I wish I was going to see these guys in concert soon.

In other news, I have the best roommates. (Thanks for holding me when I cry. More on that later.) Grocery shopping this morning was wonderful. Zumba this afternoon will be even more wonderful. And dinner with sweet, sweet girls tonight will be the most wonderful.

And happy birthday to Mr. Jay Leibold tomorrow, the man who gives me a high five every time I get back from jogging.

Happy First Day of Autumn!

It's with great joy and gladness that I write that the Lord created me. He knit me together in my mother's womb and caused me to come into being. He molded my very person intimately and intricately, with precision. I am fearfully and wonderfully made.

And not only did He form the physical nature of who I am, but He also created the inner parts, the inmost places. When He created me, He knew I would love the onset of autumn and the conclusion of summer; He knew I would delight in a good book and enjoy all coffee products; He knew I would relent to the stressors of school all too easily and enjoy Friday nights at home; He knew that I would make my bed each morning and notice the weaknesses of others more readily than my own; He knew, in His wisdom, that He would send Jesus to death on a cross to ransom His creation.

A little girl came to profess faith in Jesus Christ at six years old. She asked Him to save her. He had, and He did. That little girl is now me, a twenty year old woman who loves writing, singing, and baking and is soon to be twenty-one. My little girl mind still can't understand why the Lord would create me to save me or why a King would send His Son to die, but I rejoice because He did create me, and He did save me. Pure bliss...

And there's a small glimpse into my mind.

P.S. I'll be singing In Christ Alone with this kid at my good friend Molly's wedding in just two weeks! Excitement is an understatement.

Wednesday Morning

I'm about to run to class, but there are just some things making me smile this morning.

Summer Corn and White Bean Soup

Delicious in a bowl is what this recipe is. I made it this week (with my own modifications) and ate it for many, many meals. The only problem: I wish I had more!

Here's my version: 
  • 1/2 tablespoon canola oil
  • 1/2 cup sliced green onions
  • 1/4 cup chopped bacon
  • 1 1/2 cups frozen corn
  • Pinch of salt
  • 1(15-ounce) can navy beans, rinsed and drained
  • 1 (14-ounce) cans fat-free, less-sodium chicken broth
  • 1 (4.5-ounce) cans chopped green chiles, undrained
Heat canola oil in a Dutch oven over medium heat. Add onions and bacon, and cook 3 minutes, stirring frequently. Stir in corn and remaining ingredients. Bring to a boil; reduce heat, and simmer 5 minutes or until thoroughly heated.

I halved the recipe and changed some ingredients (ex: ham) to better suit my college lifestyle. I also put a dollop of sour cream and a sprinkle of cheese on top. I hope you try it and enjoy!
